Taco Stew Recipe

lean ground beef, cooked and drained (chicken or no meat works too)

(15 ounce) cans undrained pinto beans

(15 ounce) can undrained black beans

(11 ounce) cans undrained corn

large onion, chopped

(1 1/4 ounce) package taco seasoning

(15 ounce) can tomato sauce

(14 1/2 ounce) cans Mexican-style stewed tomatoes, pureed in blender

(10 ounce) can Rotel tomatoes & chilies

shredded cheese (optional)

Using a large stockpot, brown the ground beef with onions and a dash of garlic powder according to your taste.

Whisk together tomato sauce and taco seasoning.

Add tomato sauce to ground beef and stir.

Add the rest of the ingredients to the stockpot and stir well.

Up to 2 cups water can be added depending on your thickness preference.

Simmer on stovetop for 1 1/2 hours, allowing flavors to blend.

Stir occasionally.

When serving, you can top with shredded cheese.
